for measuring the rennet activity. Done by comparison coagulation with reconstituted milk. Units like 1:15.000 - thus means: 1 kg of rennet will coagulate 15.000 litres of milk under ideal conditions within 45 minutes. Due to different conditions like pH, temperature and wanted time in reality this means about the half - 7.500 litres.
